I’m preparing something with fish for our dinner tonight, Ikan Pepes. Pepes means cooking method of steaming the ingredients, it can be fish, chicken, vegetable or Tahu( beancurd ) wrapped in banana leaves until it becomes tender then grilling it before serve.
In this recipe you can use fresh water fish, but salt water fish can be used as subtitute. In the restaurant that serving West Java cuisine where Ikan Pepes is always on the menu, very common to use Carp fish.
Most people prefer to use a whole fish. I prefer fish fillet because it has less bones than a whole fish.
