Cantik Manis or Sweet Pretty Cake is one of many popular Indonesian cake.
The cake is sweet & pretty, the main ingredient is a combination of Hunkwe flour (Mugbean flour) & coconut milk. It combine with Biji Mutiara or Sago Pearl.
Normally this dessert are individually wrapped with thick plastic wrapper or banana leaves.
This time I used small moulds instead of wrap it with banana leaf.
Biji Mutiara or Sago Pearl is made from Cassava starch sold in various forms & color. To cook the Sago Pearl you just boil it for a long time until it look transparent, then rinse and drain it.
This cake is one of my favorite Indonesian cake. My mom used to bring this cake home every time she came back from the market in the morning. Nowadays every time I visit her, she has these cake among many other cakes for me for breakfast and I still enjoy every bite of it.
100 gram Hunkwe flour( mugbean flour)
125 gram sugar
900 ml coconut milk
60 gram sago pearls/ Biji Mutiara boil and drain
1 pandan leaf, tie a knot
1/4 teaspoon salt
1/4 teaspoon vanilla paste or powder
Mix the mugbean flour together with coconut milk, salt, sugar, vanilla, pandan leaf in the pan, stir well until it smooth.
Cook the mugbean mix in low heat untill it boil and cook. Few minutes before take the mix from the stove add the sago pearls/ biji mutiara. Stir well and take it from the stove.
While it is still hot, take 2 tablespoon of the mugbean mix onto the banana leaf , thick plastic wrap ( strong enough to wrap the mix, but not regular plastic wrap). Wrap it as you like. Or you can use a small mould. Continue until all the mix finish. Cool it and serve.
To make the cakes look smooth, wrap the mugbean mix while it is still hot.
