Putu Ayu or Steamed coconut cake.
Putu Ayu is Indonesian steamed coconut cake, is made of flour & coconut. The color green is from the Pandan leaf essence.
250 g flour
150 g sugar
125 ml coconut milk
1/2 tsp pandan essence
200 g grated coconut
1/4 tsp salt
Whisk the eggs, sugar, salt, baking powder untill fluffy. Add flour, stiring until all blended, then pour the coconut milk, vanilla & pandan essence, set aside cooked .
Steamed the grated coconut & salt until cooked & remove. Put 1/4 tsp of steamed coconut grated into each mould, press firmly into base. Pour the batter to the mould until full & steam it for 30-35 minutes.
When the cake are cooked leave to stand for about 5 minutes then ease the cake out from the mould & serve.
