Have a bite of Sate Ayam (Chicken Satay)

Sate Ayam (  Chicken Satay ). Sate/Satay is a dish of  skewered & grilled or barbeques meat over wood or charcoal fire serve with a spicy peanut sauce. Satay may consist of small pieces of sliced chicken, beef, goat, mutton, pork or fish. The meat usually marinated in a sweet seasoning. Bamboo skewers are often used. Originated in Java and it is very popular in Indonesia, it’s available almost anywhere in Indonesia. Satay can be found from street vendor tent restaurant, traveling satay vendor or even upper class restaurant.

Ingredient :

4 skinless boneless chicken about 4 oz each cut into 3/4 inch (2cm) cubes

4 tbsp Sweet soy sauce

2 garlic cloves finely chopped

1 tsp coriander

1/2 tsp nutmeg

1/2 tsp black pepper

a pinch of salt

1 package ready to use satay skewers


1 1/2 fry peanuts or dry roasted peanuts

1 Cup water

1 tablespoon sweet soy sauce ( kecap manis )

1 1/2 tablespoon palm sugar

1/8 teaspoon salt

1/4 Cup vegetable oil

1 tablespoon tamarind pulp( soaked it in 1/4 cup water for about 15 minutes)squeeze the pulp for the juice then throw away the pulp.

Spice for Peanut sauce :

5 dried red chillies (seeded & soaked in warm water)

3 cloves garlic

3 shallots

2 lemon grass ( the white parts)

1 tablespoon coriander powder

1 inch galangal

Direction for Peanut sauce :

Crush the peanuts with mortar & pestle or use mini food processor& set aside. Chop the spice paste ingredients & blend well. Heat oil& fry the spice paste until smell spicy.  Add the peanuts, water, sugar, sweet soy sauce and stir.In low heat continue stirring for about 5 minutes untill the peanuts smooth. Add 1/2 tablespoon lime juice .Serve at room temperature with the satay.


For the peanuts you can use Dry Roasted Peanuts(Planters) you can found at any supermarket.

For the Sweet Soy Sauce( Kecap Manis )I used Bango brand but you can use ABC brand, you can found this in Asian stores.

Direction for Chicken Satay :

Meanwhile soak the satay skewers in the water for about 30 minutes to prevent skewers from burning.

Put the chicken cubes in a shallow dish. Mix the soy sauce, garlic, ginger, coriander, nutmeg,black pepper & salt in a small bowl, pour over the chicken. Cover & marinate in the refrigerator for at least 2 hours.  Pre heat the broiler. Thread the chicken pieces into the skewers. Transfer the skewers to the broiler pan & cook for about 3-4 minutes. Turn the skewers over cook for another additional 3-4 minutes or untill it cooked through. Serve with peanut sauce and lontong.
