Bakwan Jagung is a simple side dish but taste very good. You can eat it also as a snack or eat together with rice & sambal (chilli sauce ). Every time I cook this dish I can’t resist eating it right after I’m done frying it. That’s what I did when I was little, I still remember when my mom cooked this dish, I kept eating it one by one. I did not want to stop. It’s so nice, specially you eat it while it is still hot & crunchy.
200 gram sweet corn or canned corn
2 tablespoon rice flour
3 tablespoon all purpose flour
1 egg, stir
1 fresh chilli, chopped thin ( optional)
2 stalks spring onion, chopped thin
350 ml cooking oil
1/2 teaspoon coriander
1/2 teaspoon salt
1/2 teaspoon pepper
Grind the sweet corn or the canned corn with mortar.
Mix the grinded corn with rice flour, all-purpose flour, egg, chilli ( opt ), green onion and spices. The mix not too runny, if it is too runny add a more flour.
Heat the oil take one tablespoon of the mix and fry it. Until golden brown both sides and cook. Take it & serve while it is still warm together with sambal (chilli sauce).
