BOLU KUKUS ( INDONESIAN STEAMED CAKE )

Bolu Kukus is Indonesian Steamed cake. When I was little what  I know about this cake is soft, looks like flower & the color are in cream & chocolate. Now days you can make it in any color you want & taste you want. To make this cake is quite a challenge, the top of this cake has to open up until 3 or 4 buds. This time I made in green, brown & cream, green from pandan leaves or pandan  essence, brown from chocolate & the cream is vanilla .

Ingredients :

2 eggs

225 gram sugar

300 gram flour

200 ml lemon/clear so

1 teaspoon vanilla

1 teaspoon pandan essence

1 tablespoon chocolate paste

Direction:

Prepare steamer, warm up for about 15 minutes.

Line bolu kukus mould with parchment paper

Beat  the eggs, sugar,vanilla until thick & paste.

Fold in 1/3 of the flour, then 1/2 of the soda, gently mix. Repeat remaining flour & soda, ending with flour.

Mix throughly until batter is free from lumps.

Divide 1/3 of the batter into small bowl & add cocoa  to one bowl & pandan essence to another bowl. Whisk until combined.

Spoon cream batter into mould. Swirl a little of the chocolate batter and a little of green batter. Steam for 20 minutes on high heat.

Make about 12 cakes

Note :

It is okay to steam the cakes in several batches. The batter can stand quite long. It is best to steam them in a small quantity at a time.

Do not open the steamer at first fifteen minutes, no peeking this can cause of the cake to stop rising.
