KETOPRAK ( RICE NOODLE WITH PEANUT SAUCE )

Ketoprak, this dish popular around Jakarta, its similar to Gado Gado. Ketoprak Jakarta consist of bihun (thin rice noodles), bean sprouts, chips & sauce made from ground peanuts & palm sugar with chilli, salt, garlic & kecap manis (Indonesian sweet soy sauce).

Ketoprak is typical street food it sold from small stalls or carts along the street. Sometime they add lontong (rice steamed in banana leaf) to this dish.

Spices:

3-4  garlic cloves

3-5 small  chilli

250 gram peanuts fried

125 gram gula jawa (palm sugar)

1 tablespoon  asam Jawa/ Tamarind water (made from dissolving 1 tablespoon Tamarind in 100 ml hot water, stir to a thick paste)

3-4 tablespoons kecap manis (Indonesian sweet soy sauce)

200-400 ml water

salt

Ketoprak  Sauce :

In food processor, process  chillies, garlic, peanuts & 1 teaspoon salt, crush & grind until smooth.

In sauce pot add asam Jawa water (tamarind water), gula jawa (palm sugar), 200 ml water and processed mixture, combine add water as needed.

Cook sauce in pot at low- medium heat until boiled & surface llooks a bit oily. Keep stirring about 5 minutes.

Remove from heat & serve.

To assemble on the plate :

Serve all in a plate with bihun( rice noodles), fried bean curd, bean sprouts.

Pour the peanut sauce, then some of the fried onion. Top with fried emping or shrimps crackers & kecap manis(sweet soy sauce)
