Otak otak is a Indonesian fish cake made of fish meat & spices.
Usually served fresh and wrapped inside a banana leaf.
The main ingredient is fresh King Mackerel or King Fish.
Otak means brains. I guest the idea for the dish somewhat resemble brains, grey, soft & a little bit squishy.
Otak otak is made of fish paste usually Mackerel mix with spices such as shallots, garlic, green onion, coconut milk, eggs & sago flour or cassava starch.
Wrapped in banana leaf then steam & grilled.
