Rujak Serut means shredded Rujak.
Rujak is an Indonesian traditional fruit salad dish.
The ingredients are similar to Indonesian fruit Rujak & shredded into roughly grated consistency. The fruits typically consists of cucumber, bangkuang ( jicama), jambu air, raw mango, kedondong, sweet potato & pineapple. The dressing is sweet & spicy, it made up of water, belacan ( shrimps paste), palm sugar, chili, asam & peanuts.
Ingredients for the Sambal or dressing :
3 Thai chili
1/2 teaspoon Terasi (shrimp paste) grilled
1/4 teaspoon salt
200 gram palm sugar
50 gram peanuts fried
50 gram pineapple
1 teaspoon asam (tamarind)mix with 50 ml water
Direction to make sambal ( dressing) :
Grind the Thai chili, terasi (shrimp paste), salt, palm sugar, peanuts. Add the pineapple & tamarind water, grind well.
Ingredients for the Fruits:
200 gram Jeruk Bali ( Grapefruit)
1 raw young mango shredded
2 cucumber, peel, clean the seeds & shredded
100 gram Bangkuang ( Jicama ) shredded
100 gram young Papaya shredded
2 Kendondong shredded
100 gram pisang batu200 gram ubi merah(sweet potato) 300 gram Jambu air ( Water Apple) 100 gram Pineapple chopped roughly To make the Rujak:
Tossed the shredded fruits in a bowl & mix it with the Sambal (dressing). Serve.
