Ayam Singgang is one of my favorite Chicken dish that my mom cooked. Ayam Singgang is chicken dish that cooked in coconut milk & spices then grilled.
I didn’t grew up with cans of coconut milk. I grew up with fresh coconut milk, my mom used to crack coconuts with knife, grated & squeezing out the coconut milk herself.
Many years later I saw some stalls in that market selling fresh grated coconut and they even do it in front of the customer while waiting or it can be pick up later, after done shopping through the market & stuffed the shopping bag with more goodies.
I enjoyed looking at how they cracked & grated the coconut, they used a special grated machine so it was quite fast to get the fresh grated coconut. So from that on it easier to buy grated coconut & have the fresh coconut milk at home ready to be use to make delicious dishes..

For this recipe I used chili paste, my mom gave it to me, made fresh from Padang.
When I visited the island long time ago I saw how they make the chilli paste. If I make this chicken recipe & Rendang (the spicy beef Indonesian style) I prefer to use this chili paste.
The Chicken cooked with spices & coconut milk then grilled.
I like it when eat together with Nasi Kunyit ( Turmeric Rice or Yellow Rice ).
1 Whole chicken or 8 pieces of chicken parts such as legs, upper legs, breast or wings
4 shallots/red onions
3 cloves garlic
2 lemon grass
2 teaspoons turmeric
1 tablespoon lime
6 kaffir lime leaves
2 teaspoons salt
1 teaspoon white pepper
2 tablespoons cooking oil
1 teaspoon asam kadis (tamarind pulp) soaked in about 1 tablespoon of water and strained for juice
4 chilli (or 2 tablespoon chilli paste), I used chilli paste from Padang
3 cm fresh ginger
4 candle nuts
1 teaspoon salt
Clean the chicken, rub with lime juice, white pepper.
Grinned all the spices.
Heat the oil in the pan and add the grinned spices, fry until fragrant.
Add the coconut milk cooked until boil.
Add the asam/ tamarind juice keep stir & cooked until the coconut milk turn oily.
Heat the grill add the chicken pieces or whole chicken. Grilled until fragrant & brown a little.
Serve with Turmeric rice or steam rice.
