Kue Pancong is rice cake mix with shredded coconut .

Kue Pancong is traditional cake from Jakarta / Betawi.

In other places they also called it Kue Rangin. Usually sold in the cart.

The cake is rich but not too sweet.

Ingredients:

250 gram Rice flour

2 Pandan leaves

500 ml santan cair (light coconut milk)

200 ml santan kental (thick coconut milk)

50 gram sugar

200 grated coconut

cooking oil

1 teaspoon salt

Direction:

Mix half of the rice flour with santan kental (thick coconut milk) add the pandan leaves, stir well.

Then add the rest of the rice flour & grated coconut & salt, continue mix it well.

Add the santan cair ( light coconut milk).

Prepare the pan with oil & preheated it.

Pour the batter about 3/4 of the pan.

Bake until it cook, lift the cake & dip the top part in sugar. Serve while it is still warm.
